Cream of Celery Soup for a Good Gut

Don’t know what to do with that extra celery in your fridge? Scott always suggests “why don’t we just eat it with Cheez whiz?” We have never owned Cheez Whiz… and unless someone sneakily buys it, I don’t plan on having it in our house! I can’t believe I used to eat it as a kid…. just the thought of it now grosses me out!

This celery soup is, light flavourful and perfect for a warm day. Whats even better, it’s good for your gut! The digestive benefits of celery are partly due to its diuretic effects — and also because it boosts circulation within the intestines, therefore helping improve digestion and relieving bloating and puffiness from water retention. It can provide polyphenols (can boost digestive and help protect again disease) and fiber and that may have prebiotic like effects, supporting the growth of good bacteria in our gut.

Celery can also support our adrenals as a medium stalk contains around 30 milligrams of sodium. On top of that, celery can help manage your cravings. Cravings are a way our body's communicate with us to let us know when nutrients are low or depleted. Often when people struggle with adrenal fatigue or low energy, they find themselves craving all things salty. This is no mistake and in fact something we should be grateful for! Our adrenals need certain minerals, such as the minerals that are found in high-quality salt such as Redmond Sea Salt, to function optimally. It is common for us to confuse our cravings for salt with a bag of chips, when although they are DELICIOUS, ultimately we need to nourish our body first and make sure we are giving it the nutrients that is needs!


Finally, celery has antioxidant and anti-inflammatory properties and it has been shown to improve the integrity of the stomach lining, decrease risk of stomach ulcers (gastric ulcers), and improve control the levels of stomach secretions.

Now that you know why celery is so great for you…here is the simple recipe that you can whip up for dinner tonight.


CREAM OF CELERY SOUP

time: 25 minutes

ingredients: 5

INGREDIENTS

3 cups Organic Vegetable Broth (divided)

1 White Onion (diced)

1 Yellow Potato (medium, diced)

12 stalks Celery (diced, leaves removed)

1/2 tsp Sea Salt


Directions

  1. In a large pot over medium heat, add a small splash of the vegetable broth. Sauté the onions until soft and brown, stirring frequently and adding more broth as needed to prevent the onions from sticking to the pot.

  2. Add the potato, diced celery stalk, remaining broth and sea salt. Bring to a simmer and cook for 10 minutes or until the potatoes and celery are tender.

  3. Use a handheld blender to purée to your desired consistency. Divide into bowls or containers. Top with desired toppings and enjoy!

Serves 4

NOTES

More gut loving benefits + protein: use bone broth

Leftovers: Refrigerate in an airtight container for up to five days. Freeze for up to two months.

Serving Size: One serving is approximately 2 cups.

More Flavour: Add dill and/or coconut milk to the soup.

Additional Toppings: Top with crackers, cream, yogurt, black pepper or a drizzle of olive oil.

Make it Creamy: For 4 servings, stir in about half a cup of coconut milk prior to serving. You could also add in some cauliflower while cooking.
