Arugula salad with dijon vinaigrette

My mother in law came to visit last week and made her new favorite salad for us - and no joke its the best! The perfect amount of zest and I love that it’s so simple. I added the pine nuts and hemp hearts and think they are a great addition. This salad has been on repeat this week and will continue to be :)

Ingredients:

1 teaspoon Dijon mustard

1 clove, minced fresh garlic

4 tablespoons white wine vinegar

Kosher salt and freshly ground black pepper

1/4 c pine nuts

1/4 cup olive oil

5 oz container of baby arugula

hemp hearts to sprinkle on top

Directions:

  • In a small bowl, whisk together the mustard, garlic, vinegar & salt and pepper to taste. While whisking, slowly add the olive oil until the vinaigrette is emulsified.

  • Broil pine nuts till they are toasted (browned.)

  • Place the arugula in a medium bowl and add enough dressing to moisten. Sprinkle with a little extra salt and pepper, if desired. Sprinkle pine nuts & hemp hearts on top and serve!
